1 tablespoon extra-virgin olive oil
2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
¾ teaspoon salt
¾ teaspoon dried Italian seasoning
½ teaspoon black pepper
1 12-ounce package cooked Italian-style chicken sausage
1 pound precooked, refrigerated potato wedges
2 bell peppers, seeded and cubed
2 garlic cloves, chopped
¼ cup bottled Italian salad dressing
In a nonstick skillet, heat oil over medium-high heat. Season chicken with ¼ teaspoon each of the salt, Italian seasoning and black pepper. Sauté chicken for 5 minutes, stirring occasionally.
Cut sausage into ½-inch pieces. Add to skillet along with potatoes, peppers and garlic. Stir in remaining ½ teaspoon salt, ½ teaspoon Italian seasoning and ¼ teaspoon pepper. Add Italian dressing; stir. Cover skillet; cook over medium-high heat for 15 minutes, stirring occasionally. Remove from heat; let stand 5 minutes.
