4 8-inch whole-wheat tortillas
1 tablespoon olive oil
12 ounces lean beef, cut into bite-size strips
1/3 cup finely chopped onion
1/3 cup finely chopped green bell pepper
½ cup chopped tomato
1-2 teaspoons fajita seasoning mix
½ cup shredded reduced-fat cheddar cheese (2 ounces)
¼ cup bottled salsa
¼ cup fat-free sour cream (optional)
Wrap tortillas tightly in foil. Heat in a 350-degree oven for about 10 minutes, or until heated through. Meanwhile, heat oil in a 12-inch skillet over medium-high heat. Add steak, onion and green pepper; cook, stirring occasionally, for 2 to 3 minutes, or until desired doneness. Remove from heat. Drain well. Stir in tomato and seasoning mix. To serve, fill warm tortillas with meat mixture and roll up. Serve with cheese, salsa and sour cream, if desired.
