Course Description
 

 


This is not just a course about cooking and eating. Although that does come later in the first and second nine weeks, the student’s knowledge about caring for his/her well being through nutrition and meal planning are the emphasis of the course for the first six weeks.

      1. Nutrition and well-being

            Dietary guidelines

            Food pyramid

            Nutrients

            Diet analysis

            Meal planning

            Eating disorders                                      3-4 weeks

           

      2. Consumerism

            Grocery shopping

            Budgeting

            Setting up a kitchen

            Kitchen management

            Equipment                                                2 weeks

 

      3. Recipe interpretation/ writing

            Abbreviations and equivalencies           

            Measurements

            Techniques                                1 week

     

      4. Procedure and equipment

            Identification and correct use of equipment

            Procedures, which are taught in class      1 week 

 

      5. Foods labs

            Breakfast foods

                  Quick breads

                  Eggs

            Yeast breads

            Pasta

            Fruits and vegetables

            Dairy products

            Sauces

Teacher demonstration for procedure and technique followed by the student doing the same.
